The middle of March doesn’t look like spring at all. Why not
have a spring party? Especially on the 17th of March when
all Irish people celebrate St. Patrick Day! Agreed!
We will have an Irish party!
What do we know about the Irish cuisine? Coffee, porter and
Irish stew described by Jerome C. Jerome. It turns out that the
main rule in the Irish cuisine is “food must be nourishing”. It’s
because of the climate, hard conditions in which people
survive. It looks like Russia, doesn’t it?
The main meals in Ireland are bread, potatoes, meat and fish.
Let’s cook some traditional Irish dishes!

SOUP AS A STARTER
IRISH SOUP WITH CABBAGE AND BACON
A hot soup with cabbage and bacon is the best way to get warm on a cold day!
Ingredients: (for 2 people)
cabbage – 150 gr
bacon – 40 gr
tomatoes (fresh or canned) – 200 gr
1 onion
1 potato
vegetable broth – 300 ml
butter – 20 gr
salt, pepper

How to make:
Peel 1 potato and 1 onion and dice
them. Cut bacon into strips. Chop the
cabbage. Heat the butter in a pan with
a thick bottom. Put onion and bacon
into the pan with butter and fry them
for 3-5 min. Add potatoes. Fry the
vegetables for 3-4 min more.
Dice tomatoes finely (or take canned
tomatoes) and add them into the soup.
Pour vegetable broth. You can add salt
to taste. Boil it for 12-15 min until
potatoes are ready. Then add chopped
cabbage and boil it for 10 min more.
The soup is on! Add pepper to taste.

THE MAIN COURSE
MEAT A LA IRISH
Ingredients: (for 2 people)
Veal mince – 500 gr
Strips of bacon (the fatter, the better) – 150-200 gr
Salt, pepper, oil – 30-50 gr
How to make:
Tenderize the mince and divide it into 4 cutlets. Wrap
them into bacon strips. Oil cutlets and fry them for about
10-15 min. Wrap them into silver paper and cook in the
oven for about 30 min. When the cutlets are ready you
can add salt and pepper. Then fry some small peeled
jacket potatoes on the same frying-pan. You can serve
meat a la Irish on toasts. Bon appétit!

DESSERT
Why not eat cake and porter? You think it’s impossible.
Let’s see!
Once upon a time there lived an Irishman whose name was Sheamus MacDonnell and most of all
he liked porter and fruit cakes in the molasses. One day he was sitting in a pub sipping porter and dreaming of
a cake his mother was cooking at that very time. “I wish I could enjoy two favourite things at the same
moment! There is nothing like good porter and fruit cake! Porter… cake… Why not try changing molasses in
cake to porter? They are both dark! It must work!”
Thus, a new cake based on porter appeared and it was juicy, delicious and smelt fantastic! “It is
the most delicious thing I have ever tasted!” – said Sheamus MacDonnell and presented the recipe to all
people.
PORTER CAKE
Ingredients:
butter – 140 gr
raisins (light and dark) – 200 gr
dried apricots – 100 gr
candied fruit – 60 gr
1 orange (juice and orange zest)
porter – 300 ml
3 eggs
flour – 320 gr
spices (cinnamon, nutmeg, ginger, cloves,
cardamom) – 2 tablespoons
baking powder – 1 tablespoon
honey - 1 tablespoon (for oiling)

How to make:
Cut dried apricots and mix them with raisins. Add butter, orange
juice and zest, pour porter. Mix them and put on fire. Bring the
mixture to a boil and leave it on low heat for 15 min stirring
from time to time. Then cool the mixture for 10 min. Meanwhile
mix the flour with spices and baking powder. Whip eggs for 5
min. Add cooled mixture to eggs and mix carefully. Add the
flour gradually and knead the dough properly. It should be thick
but should pour heavily from the spoon.
Cover the baking dish with silver paper and pour the dough.
Cook it in the oven for about an hour at 160C.
Cool the cake in the baking dish for 20 min and then cool it on
the grill up to the end. Oil the warm cake with honey. Wrap it
into silver paper. Put into a box and leave for about a week.
After a week you can treat yourself with a piece of fantastic
cake! You can add chocolate and ice cream.

AFTER-DINNER DRINKS
End the evening’s festivities with a cup of Irish
coffee!
IRISH COFFEE
Ingredients: (for 6 people)
whipped cream – 200 gr
granulated sugar – 2 tablespoons
vanilla extract – 1 tablespoon
Irish whisky – 170 gr
dark sugar – 6 tablespoons
freshly brewed coffee – 6 cups
How to make:
Whip cream with vanilla in a cooled pan.
Pour 25-30 ml of whisky into each of 6
cups, add 1 tablespoon of dark sugar and
freshly brewed coffee. Coffee shouldn’t be
too strong. Mix carefully. Add whipped
cream and serve up at once.
